Hello Beauties! I am more than happy to report that my countless efforts of trying to create a vegan pizza are finally crowned with success.It’s a huge deal to me since giving up pizza was the hardest thing for me when I went vegan. And making a delicious vegan pizza turned out to be not so easy as I thought… Until now! Because this baby right here is to die for! Seriously, you won’t even notice that there is no cheese. I know that it looks simple and ordinary but trust me, when you try it you’ll change your mind.
{Low Fat} {WHOLE WHEAT} {Low sodium}
Ingredients:
For the Dough:
- 700 grams of white flour
- 300 grams of whole-wheat flour
- 500 ml lukewarm water
- 1 tbsp. Himalayan salt (or sea salt)
- 1 tbsp. olive oil
- 1 pack dry yeast (12 grams)
For the Tomato Sauce:
- 3 tbsp. tomato paste (organic if possible)
- 1 tbsp. olive oil
- 1 ½ tbsp. water
- pinch of Himalayan salt (or sea salt)
- pinch of freshly ground pepper
- pinch of dry basil
- pinch of dry oregano
For the Topping:
- mushrooms (fresh or frozen)
- red bell peppers
- sweet corn kernels (frozen)
- Vegan Basil Pesto
Optional Topping:
- black olives
- fresh tomatoes
- fresh basil leaves
- dry oregano or dry savory
Instructions:
- Combine the dry ingredients for the dough (white and whole-wheat flour, dry yeast and salt into a large mixing bowl. Make a small well in the middle of the mixture, and then add the olive oil and the water. Use a spoon to stir until well combined. Remove the mixture from the bowl and start kneading with your hands. Add more flour if needed to achieve a non-sticky elastic dough.
- When the dough is ready place it in a slightly greased bowl, cover it with kitchen towel and let it rise for 1 hour at room temperature.
- Meanwhile combine all of the ingredients for the tomato sauce in a small mixing bowl and stir until well combined.
- When the dough is ready divide it into 8 pieces. Roll them in a balls, wrap each of them in plastic foil and freeze the remaining for another batch.
- On a flour – dusted surface, take a piece of the dough and roll it out into a rough circle about 0,5 cm thick. When ready place your pizza on a baking paper.
- Spread the tomato sauce out to the edges. Add the toppings and sprinkle the Vegan Basil Pesto on the top.
- Place the pizza in a preheated oven (250 C) and cook for 8 – 12 minutes until golden and crispy.
- When you remove it from the oven sprinkle fresh basil leaves on the top and dry oregano. You can also add sliced black olives and fresh tomatoes.
