Well, this baby right here is not only a magnificent blend of vanilla, bananas and berries but is also a 100% guilt free pleasure.
It’s for one of those days when you feel too fabulous and a plain oatmeal simply can’t seal the deal.
{GLUTEN FREE} {VEGAN} {FAT FREE}
INGREDIENTS:
For the Pink Layer
- 150 grams Forest fruits mix
- 1 ripe banana
- 4-5 pitted dates
- 250 ml soy/almond/rice milk
- 1 tbsp. chia seeds
For the Vanilla Layer
- ½ cup buckwheat
- 1 ripe banana
- 50 ml soy/almond/rice milk
- 1 tbsp. agave syrup
- 1 Vanilla bean
- 1 tbsp. chia seeds
- 6-7 banana slices for decoration (optional)
INSTRUCTIONS:
- Soak the buckwheat in cold water over night or in hot water for about 20 minutes.
- Drain the soaked buckwheat and rinse it with cold water.
- Combine all of the ingredients for the Vanilla Layer (except the chia seeds) in food processor/chopper and blend until small pieces from the buckwheat remain.
- Add the chia seeds and give it a swirl until the chia is well combined with the mixture.
- Transfer your mixture into a glass jar and leave it in the fridge.
- Combine all of the ingredients for the Pink layer (except the chia seeds) in a blender and blend until smooth.
- Add the chia seeds and give it a swirl until the chia is well combine with the mixture.
- Remove the jar with the vanilla pudding from the fridge and place cut in half banana slices right on top of the pudding while pressing them into the glass.
- Pour the Pink Layer on top of the Vanilla Layer and put it back in the fridge. Leave it for at least an hour or better overnight.
